Simple Honest Vegetables

2 onions diced

2 tbsp veg oil

1 tsp cumin seeds

2 cloves of garlic

1/2 carrot grated

1/2 red pepper sliced

350g shredded cabbage

2 tbsp Simple Honest Masala

1/2 mug of water

400g tin of chopped tomatoes


Pour oil into a large, hot pan.

Add the cumin seeds and onion plus the garlic, then fry until onions are translucent.

Next grate in a carrot, put in the peppers and cabbage, brown the vegetables.

Stir in the Simple Honest Masala and half a mug of water.

Pour in a can of chopped tomatoes.

Cover the pan with a lid and simmer for 15 mins, stirring occasionally.

Remove lid, turn up the heat and reduce down until you have the desired thickness of sauce.

Remember to stir, or the vegetables may stick to the base of the pan.

Let it rest for 5 mins.

Serve with biryani, roti and raita.
