Simple Honest Chicken Curry

1 large onion. 

500g of boneless chicken thigh, diced into large chunks.

390g passata.

2 tbsp of cooking oil.

2 tbsp of Simple Honest Masala.

1 tsp cumin seeds.

1 chopped clove of garlic.

Dried chillies to taste.


Add the oil to a large, hot pan.

Add the cumin seeds and fry until they go dark brown.

Add onions, garlic and chilli.

Fry until onions are translucent.

Add the diced chicken and lightly brown.

Pour in the passata and stir in the Simple Honest Masala.

Cover the pan with a lid and simmer for 30 mins, stirring occasionally.

Remove lid, turn up the heat and reduce down until you have the desired thickness of sauce.

Remember to stir, or the chicken will stick to the base of the pan.

Let it rest for 5 mins.

Serve with basmati rice, naan and a beer.
