Simple Honest Burgers

Updated: Mar 28, 2021

We spotted the warm weather on the horizon, perfectly coinciding with the great English unlockdown of 2021. It got us thinking that this moment deserved a special celebratory recipe, a Simple Honest signature burger.

For a while it's been a concept that we have been wanting to dazzle the BBQ with our own creation of meaty succulence, beautifully balanced flavours and delicate but mouth watering spices. The thing is we really wanted to nail those flavours and produce a patty that perfectly communicates Simple Honest cooking, so naturally we had to do some food experimenting.

We landed on a couple of recipe ideas for two burgers. Both use lamb, both quite different. Lamb makes an amazing burger with stunning flavour, but the trick is how to keep it moist. The dilemma can be that it is overcooked and dries out with little flavour, you end up with a really lackluster burger and no one wants that at your first unlockdown BBQ.

So with this dilemma in mind we put our ideas onto paper and came up with the Simple Honest Keema Burger and the Simple Honest Spicy Lamb Burger.

First up the Simple Honest Spicy Lamb Burger which was a blend of our Simple Honest spice mix, lamb mince, finely chopped onion, garlic, cumin seeds, bread crumbs, coconut oil, coriander and ginger for a real punch.

This patty was quite wet, though kept form and did not dry out at all (hooray!!) but it did shrink a little in the pan. The ginger seemed to overpower the Simple Honest flavour, so I most certainly didn't get the balance right on this one. The coriander and coconut brought an almost refreshing touch, the Spicy Lamb burger went down well with my kids.

The second recipe was the Simple Honest Keema Burger based on the successful Simple Honest Keema recipe. This keema patty is a gluten free recipe and uses peas as the binding element.

A blend of Simple Honest spice mix, lamb mince, finely chopped onion, garlic, cumin seeds, peas, mint and chilli flakes. Mint and lamb are already a proven match for one another and the keema tones of this burger was so blooming tasty. The patty was beautifully moist and blend just so full of flavour. The peas were brilliant, adding texture and perfect for the keema flavour (I'm not massive on veg in burgers!!), the peas do add valuable greens too. The Simple Honest spice mix really was the star of this burger. The flavour of the Keema Burger was really stunning and this keema is for sure a keeper!

On this occasion the Simple Honest Keema Burger stole the show, the Spicy Lamb Burger needs a little refinement to the patty so that we can bring you that perfect recipe you Simple Honest customers deserve.

For now please take this Simple Honest Keema Burger recipe as our sweet offering for a wonderful time with dear family and friends over home cooking in the weeks to come.

Simple Honest Keema Burger

Serves 4

250g lamb mince.

2 tbsp Simple Honest Masala.

1 tsp cumin seeds.

1 finely chopped onion.

2 cloves of garlic.

100g of peas.

a handful of mint leaves, chopped.

1 tbsp of chilli flakes.

Combine all of the ingredients in a bowl.

Use a hand blender to gently blend for 2 minutes.

Mould into your desired patty shapes and place on your frying pan or BBQ.

Cook on a medium heat, not too high so the tasty fat from the lamb does not catch.

Flip the patties as required, cook for around 8 minutes.

Serve in a bun or a Simple Honest Roti for that complete finish, garnish with Simple Honest Raita, salad and a lovely fragrant mango chutney.
