Jumbo Prawns in a Spicy Coconut Rasa.

We all have that tin of coconut milk nestling in the back of the kitchen cupboard, gathering dust, alone and slowly approaching its' expiry date.

It's a shame as coconut milk is so versatile, healthy and unbelievably easy to cook with. It makes a perfect spiced broth (rasa); an ideal accompaniment to prawns, chicken, fish, noodles, crunchy veg...the list is endless.

Here's something quick and easy you can make with that lonesome tin; Simple Honest's take on a Massaman Curry, a staple on the Wagamama's menu; a tasty fusion of Asian styles that satiates the soul.

Simple Honest Soul Food!

Prep time approx. 5 mins.

Cooking time approx. 10 mins.

What you need.

500g of peeled and washed jumbo prawns.

1 red bell pepper - sliced.

1 small white onion - chopped.

2 basil leaves.

1 tin of coconut milk.

2 tbsp of cooking oil.

2 tbsp of Simple Honest Masala.

1 chopped clove of garlic.

1 tspn dried chilli flakes.

Two whole dried chillies for extra fire power.

What you do!

Add the oil to a large, hot pan.

Fry garlic, chilli and jumbo prawns until cooked.

Now toss in the peppers and onions and fry for a minute - no longer!

In a separate saucepan gently heat the coconut milk, whisking in the Simple Honest Masala.

Heat until gently simmering.

Pour over the jumbo prawns, peppers and onion.

Top with the two basil leaves.

Let it rest for 5mins.

Top Tipple!

Serve with a Special Fried Rice and a glass of Shiraz; a nice full bodied red that bounces off the tastebuds and sits marvellously on top of the spices and shouts 'I'm here! I'm here! Did you miss me!'.
